We recently made a creative video for a competition. It was my children's efforts purely. They took an old brownie recipe of mine and turned it into a special meaningful, and metaphorical recipe with a strange concept.

The video gets right into it as soon as it starts. We are introduced to this frame in which different ingredients come together. The background music is chilling, with sound effects of the forest to further its ritualistic theme. The ingredients are kind of sacrificed as soon as they enter the bowl, that's the emotion they were going for. The poem really helps clarify that.
Here it is:

All good things come with a price
The gods want the darkness to see the fire
and melt away before it

The necessities and the luxuries come together

and mothers watch as little lives wither
the essence of the sacrifice is reminded before
flowers blossom in this darkness
while the bitter ones remain unchanged

their pedestal stands decorated
with the finest linen sheets
they march into the flames for the final good deed
the heat presented them with many a great battles
and the folks grew impatient and rattled

out of the fire rises something beautiful
the bitter, the sweet,
the dark and the light
the living and the burnt

made into something of delight

Explanation:
All good things come with a price- we are introduced to the theme of the sacrifice-ritual of the video
good thing being the brownie
the gods want the darkness to see the fire and melt away before it- reference to dark chocolate being melted
the necessities and the luxuries come together- sugar and butter reference- how one is a necessity and one is a luxury, but they both come together for this recipe
and mothers watch as little lives wither- reference to eggs
the essence of the sacrifice is reminded before- translates into "we add vanilla essence before"
flowers blossom in this darkness- all purpose flour is added to this chocolaty(dark) mixture
while the bitter ones remain unchanged- the cocoa powder is still bitter
their pedestal stands decorated with the finest linen sheets- the baking tray is supposed to be layered with butter paper
they march into the flames for the final good deed- put into the oven so these different ingredients come together as one- the final good deed
the heat presented them with many a great battles- reference to the ritual
the folks grew impatient and rattled- reference to how people get impatient when the batter is in the oven and they can't wait for it to come out

out of the fire rises something beautiful- reference to the brownie
the bitter the sweet- reference to cocoa powder and sugar

the dark and the light - dark chocolate and butter
the living and the burnt- eggs and cocoa powder

made into something of delight- delight being the brownie

Hope you guys enjoyed the creativity! Here's a link to the video

Some of you asked me to make chocolate cake on my channel on Youtube. And if you have been following me, or know me even a little bit, you know that I only need the tiniest of excuses to make anything chocolate related. A few weeks ago, that excuse was "to not forget how to make brownies."
But this time, it was more valid since a lot of you wanted me to make a good, comprehensive recipe for this baby right here.

So get your aprons on, because we're about to make some cake, and it's gonna be drool worthy. Just look at it!

After I was finished making it, I made sure everyone in the family got a taste. We went over to relatives that day and everyone just dig into it right away, before dinner. We all thought about it really hard, but it was like this gorgeous cake was staring right back at us, almost like mocking us. It was supposed to be a night of drinks, food and eventually some cake. Instead, we started with cake, and sat for quite a long time on a full stomach waiting for the cake to go down clear some space so the food and drinks could join the party.

I'm sure you want a piece of this as well, already. And trust me, making this piece of cake, is piece of cake. Excuse the pun, I'm still high on sugar from the cake. Which reminds me of another story!

Okay so here are the ingredients you'll need:

All purpose flour - 1 and 3/4th cups
Sugar - 2 cups
Cocoa - 3/4 cups
Baking Soda - 1 and 1/2 tsp
Baking Powder - 1 and 1/2 tsp
Salt - 1 tsp
2 eggs
Milk - 1 cup
Oil - 1/2 cup
Vanilla extract - 2 tsp
Hot water 1 cup

Chocolate Ganache
300 gms dark chocolate
300 grams nutella
360 grams heavy cream

Chocolate Mirror Glaze:

To make the mirror glaze:
100g Condensed Milk

Here is the direction

Everyone on the channel showed a good response to our Mutton Curry recipe, and I had been getting good compliments for my mutton biryani from relatives and the like. I just thought- this recipe should be on the channel as well, I had a feeling everyone would like it. So, we decided to release my easy Mutton Dum Biryani recipe!

 Ingredients:

For marination-
Mutton 1 kg
ginger garlic paste 2 tbsp
red chilli powder 2 tbsp
turmeric 1/2 tsp
salt as per taste
yogurt 2 cups
handful of mint and coriander leaves(each)
2 tbsp biryani masala
2 bay leaves
6-8 cloves
2 black cardamoms
2 cinnamon sticks
1 tsp shahi jeera
half a lemon's juice
3-4 slit green chillies
1 tbsp desi ghee
browned onions 1/2 cup(remaining used later)
Kewra water 1 tbsp/1 tsp(optional)

For cooking step:
Rice 4 cups basmati(approx 850-900 grams)
4-5 onions chopped thin and fried till golden brown
salt to taste
water(for rice)
1 tbsp oil
1 bay leaf
shahi jeera 1 tbsp
3-4 cloves
3-4 green cardamoms
3 tbsp milk
1/2 tsp saffron
2 tbsp water+ few drops of orange food colouring
remaining fried brown onions
handful coriander leaves
handful mint leaves
2 tbsp kewra water
1/2 cup melted desi ghee

Wheat flour dough to cover lid(as per the lid of your pan)

Method:

1) soak the onions in water for 20 mins so they are not bitter when eating and doesn't make you tear up while cutting
2) now cut the onions into thin slices
3) heat a pan and deep fry the thin slices of our onions in it, on medium heat till they get golden
4) now take them out on absorbent or tissue paper, same way deep fry the remaining
5) take the washed mutton in a bowl(i'm using the pan straight away)
6) now add ginger garlic paste
7) 2 tbsp red chilli powder, 1/2 tsp turmeric powder, salt to taste
8) add 2 cups of yogurt, handful of mint leaves, handful of coriander leaves(washed)
9) 2 tbsp biryani masala( you can find the link to that recipe here: https://youtube.com/watch?v=9Jr7s8VAmok )
10) mix well
11) add 2 bay leaves, 6-8 cloves, 4-5 green cardamoms, 2 black cardamoms, 2 cinnamon sticks, 1 tsp shahi jeera, half a lemon's juice, 3-4 slit green chillies
12) mix all of these really well
13) add 1 tbsp desi ghee and mix well
14) lastly add your golden brown onions(half of them) and my favourite ingredient: Kewra water which will give a really beautiful aroma to this biryani
15) we'll mix it and keep it to marinate for at least 1 hour but if you have the time You can marinate it for 4-5 hours or overnight
16) I had washed 4 cups of basmati long grain rice and soaked them in water for half an hour, drain them
17) in a large pan let water boil and add salt(if salt isn't adequate here, the biryani won't taste good)
18) add 1 tbsp oil, let it boil again and add rice
19) 1 bay leaf, shahi jeera 1 tbsp, cloves, 3-4 green cardamoms, stir well.
20) when the water boils and the rice are half done, we'll drain out the water
21) add 1/2 tsp saffron strands in 3 tbsp warm milk and set it aside
22) Pour rice on the marinated muton(which was in a pan)
23) Pour the saffron milk, and pour a food colouring mixture of 2 tbsp water+few drops of red/orange food colour. this is optional.
24) Now add in the remaining fried onions, add in 1/2 cup of melted desi ghee
25) to seal the biryani I had a wheat flour's dough which I will rolled out into a cylindrical shape, and cover the pan's lid. you can cover the pan first with a lid then seal it as well if you'd like. The idea is to cover the lid so none of the steam escapes
26) cook on a high flame for 20 minutes
27) after 20 minutes we'll cook it on a low flame for 30 minutes, make sure once again that the lid is sealed off properly and there's no way any steam will escape so that the mutton infuses with aromas and spicy flavours and cooks well
28) switch off the flame after cooking for 30-40 minutes, now open the lid and check!

serve hot and garnish with dry fruits

you can serve it with raita as well- recipe: https://youtube.com/watch?v=PRd4QB22ua0

Ingredients:

8 to 10 Jalapeños
1 tbsp Cream cheese
5 tbsp Grated Cheddar Cheese
1-2 tbsp Grated mozzarella Cheese
2 tbsp Chopped vegetables of your choice ( I have used:
1 tablespoon chopped onion + 1 tablespoon red bell pepper
+1/2 tablespoon boiled sweet corn)
1 tbsp green bell pepper)
1 Cup Bread crumbs
1/2 Cup Plain flour/Maida
1/4 tsp Black pepper powder
1/4 tsp Red chilly flakes
Oil for frying

Method:

First we prepare the filling by mixing both the cheeses.
Now add your chopped vegetables, black pepper powder, red chilli flakes (I’m not adding salt as cheese is already salty).
Mix it all together.
Keep that mixture aside and start cutting the jalapeños.

1st way of cutting-
First, cut the top part, now smoothly deseed it by removing the middle part.
2nd way of cutting-
Cut the top part and then split the jalapeño from the middle to deseed it with a spoon.

Now fill the hollow jalapeños with the mixture that we had set aside(after filling it in, join all the parts back and make sure they stick together-or you could just fill the parts separately, upto you).

Now it’s time to coat the stuffed jalapeños.
For that, take plain flour, red chilli flakes, salt, and mix it together.
You can use oregano as well.
Now keep adding water and mixing it together to create a thick flowing consistency.
On the side, I have my bread crumbs which I have made by mixing oats and bread crumbs.
Now, dip the jalapeños in the flour batter, and then coat them in bread crumbs.
Repeat this step one more time.

Now it’s time to fry the jalapeños.

Once they turn crispy and golden brown, they're ready to be served!

A festival really close to me. Its a day when colours become a lot more important, and through that excuse we end up meeting and celebrating with all kinds of people, random strangers, distant relatives, everyone becomes a part of your celebration if you want them to. Inexplicable amount of happiness is spread on this day. Through colours, through food, through people.

I've made 2 playlists for all of you, one with sweets and desserts, and one with snacks and savoury dishes.

Hope you enjoy today, with good food, safe colours, without wasting water, and with great company.

See you on the channel!

8th of March marked as 2017's women's day and we got to see some amazing films and videos about it, including Kriti Sanon's "Happy Whatever" and some positive ones by multiple airlines and what not. On this day, my kids let me relax, and I took a day off of all my household duties, they cleaned cooked and even shot an episode with themselves. So my son will be coming on the channel again. We also made a video this women's day, and it was a basic idea. My son revived old footage and made it into something new- something lively. He didn't want to justify the beauty and relevance of women's day and women in general by their success- but by their simple being. This video's aim was to bring out the fact that women don't need to be successful to be equal, or relevant. We can't let money or fame or success define an individual's worth in the society, but one's humanity does. Just tired of having people feel the need to portray the outer beauty of success and fame and forget the simplicity and feeling of warmth. This is a very warm video, for all of you. I hope you will enjoy it.

We've shot the butter chicken recipe before as well, with bones and from scratch, so we roasted the chicken ourselves in the oven. But I wasn't quite happy with that video, and since we've improved quite a lot with video production, I decided to give the boneless easy version of restaurant style butter chicken. So here goes!

For marination:
Curd 1/2 cup
Salt to taste
Red chilly powder 1 tbsp
Chicken tandoori masala 1 tbsp
Red/Orange food colour 1/8th  teaspoon
Boneless chicken 500 gm (Chicken breast pieces cut into cubes)
Ginger Garlic Paste 1 tbsp
Desi Ghee 1 tbsp

For gravy:
Onion 1 big onion chopped
Tomatoes 5 to 6 (Make sure to use red firm tomatoes)
Tomato ketchup 3 tablespoon
Cream 1 cup
Cashews 15 to 20
Butter 50 grams or 2-3 tbsp
Sugar 1-2 tablespoon depending on much of the sweet hint you want in the gravy, I used 1.5 tbsp
Kashmiri Red Chilli Powder 1 tbsp
Kasoori Methi 1 tbsp(crushed)
Garam Masala 1/2 tsp
Green Chillies 2(slit)
Nutmeg Powder 1/4th tsp
Jeera Powder 1/4th tsp
Coriander Powder 1 tsp
Ginger Garlic Paste 1 tbsp

Method:
1) take boneless chicken in a bowl(washed), followed by salt, red chilli powder, some red/orange food colour, its optional but it'll give a great colour to the chicken exactly like restaurants
2) chicken tandoori masala ginger garlic paste, desi ghee and mix it all well
3) now add smoothened yogurt, mix well
4) let it marinate for 30 minutes, keep it aside
5) add 1 tbsp oil to a heated pan and 1 tbsp butter
6) add red dried chillies, sauté a bit
7) and add chopped onions, cook till translucent
8) now add ginger garlic paste, mix well and sauté for abut 1 minute
9) now add roughly chopped tomatoes and slit green chillies
10) Salt, red chilli powder, coriander powder, garam masala kasoori methi, nutmeg powder as well as jeera powder, add cashews and mix well. Sauté the masala on a medium heat
11) now add sugar and mix it
12) now we'll add my secret ingredient: tomato ketchup
13) On low flame let the masala cook covered with a lid, for about 5-7 minutes, then open it and stir it
14) now we'll cool it down and then grind it in a mixie into a fine paste
15) add butter to a heated pan, now place the marinated chicken pieces
16) sauteé on medium heat for 30-40 seconds
17) let it cook on a low flame for 2-3 minutes
18) after 2-3 minutes open the lid and flip the chicken, and let it cook covered with a lid for 2-3 minutes so the chicken cooks fully
19) Take out all the cooked chicken and add butter to a pan(yes butter, lots of it, after all its butter chicken)
20) we'll strain the paste we made and pour it onto our pan so we get a smooth restaurant style gravy
21) we'll discard the tomatoes' seeds after sieving
22) Mix this silky smooth rich gravy with the butter
23) Now add in the chicken and mix well. Then add cream and mix that well.
24) Add handcrushed Kasoori methi and Garam Masala, mix well
25) Let it cook for 3-4 minutes on a low flame
Take it out and serve in a Kadai preferably, like the one I served in, with cream on top.
Check out the video, its got punjabi music and its a lot of fun!

Ingredients:
Maida ( All purpose flour ) 2- 1/2 cup
Desi ghee 4 tablespoon
Carom seeds ( ajwain ) 1 teaspoon
Salt to taste
For stuffing
Potato 4 big
Anardana 1 teaspoon
Coriander seeds 1 tablespoon
Ceshew nuts 10 to 15
Raisins 10 to 12
Green peas 1 cup
Green chilly 1
Aamchoor powder 1 - 1/2 teaspoon
Red chilly powder 1 teaspoon
Garam masala 1 teaspoon
Desi ghee 2 tablespoon
Cumin seed 1 tablespoon
Ginger chopped 1 inch piece
Coriander powder 1 teaspoon
Salt to taste
Oil for frying

 Method:

1) add all purpose flour, salt, carom seeds and desi ghee to a bowl
2) now mix with your hands, use your fingertips to mix the all purpose flour with the ghee so you achieve a breadcrumb consistency or the dough starts combining
3) now little by little add water and knead a firm dough
4) Now cover the dough with a wet/damp cloth and let it set aside for 30 minutes
5) peel boiled potatoes and mash with your hands, please do not grate them
6) we'll dry roast coriander seeds and anaardana in a hot pan, when it starts leaving the fragrance take them out
7) add desi ghee to the same pan, add cashews and raisins, sauteé a bit and take them out
8) in the same pan, add jeera, ginger, red chilli powder, coriander powder, stir
9) add boiled mashed potatoes green chillies, peas, garam masala, salt, aamchoor and coriander powder
10) now crush the two ingredients we had sautéed the first time, mix well after crushing
11) now cover it with a lid and let it cook on  a low flame for 10 minutes. so the masala mixes really well with the potatoes
12) chop the dry fruits, chop the green coriander leaves and mix them in the stuffing
13) mix it really well
14) switch off the flame and let it cool down
15) after half an hour take the dough out and knead it
16) halve it into equal pieces
17) we'll roll it in our hands into smooth balls, and after that with a rolling pin we'll roll it out like a chapati but not too thick not too thin
18) use the knife to cut the samosa sheet from the middle
19) apply water with your fingertips onto the edges very carefully, and pick up the sheet to fold it along the edges to form a cone
20) use fingertips to press the edges in to seal them so that the samosa filling doesn't escape while frying
21) hold the cone from below and fill the stuffing
22) again apply some water on the edges as we'll be using those sides to close it
23) pressing with fingertips, seal these edges, make sure its sealed tight
24) same way we'll prepare the rest of them
25) make sure oil is hot, and your pan is heavy bottom
26) check the oil temperature by dropping a small piece from the dough, if its hot, add the samosa and reduce the flame to a low and fry till golden brown on both sides
27) take them out when golden brown, serve with chutney!

Also check out my video recipe on YouTube for sure, it's a good video!

Here it is:All good things come with a priceThe gods want the darkness to see the fireand melt away before itThe necessities and the luxuries come togetherand mothers watch as little lives witherthe essence of the sacrifice is reminded beforeflowers blossom in this darknesswhile the bitter ones remain unchangedtheir pedestal stands decoratedwith the finest linen sheetsthey march into the flames for the final good deedthe heat presented them with many a great battlesand the folks grew impatient and rattledout of the fire rises something beautifulthe bitter, the sweet, the dark and the lightthe living and the burntmade into something of delightExplanation:All good things come with a price- we are introduced to the theme of the sacrifice-ritual of the videogood thing being the browniethe gods want the darkness to see the fire and melt away before it- reference to dark chocolate being meltedthe necessities and the luxuries come together- sugar and butter reference- how one is a necessity and one is a luxury, but they both come together for this recipeand mothers watch as little lives wither- reference to eggsthe essence of the sacrifice is reminded before- translates into "we add vanilla essence before"flowers blossom in this darkness- all purpose flour is added to this chocolaty(dark) mixturewhile the bitter ones remain unchanged- the cocoa powder is still bittertheir pedestal stands decorated with the finest linen sheets- the baking tray is supposed to be layered with butter paperthey march into the flames for the final good deed- put into the oven so these different ingredients come together as one- the final good deedthe heat presented them with many a great battles- reference to the ritualthe folks grew impatient and rattled- reference to how people get impatient when the batter is in the oven and they can't wait for it to come outout of the fire rises something beautiful- reference to the browniethe bitter the sweet- reference to cocoa powder and sugarthe dark and the light - dark chocolate and butterthe living and the burnt- eggs and cocoa powdermade into something of delight- delight being the brownieHope you guys enjoyed the creativity! Here's a link to the videoEasy Homemade Chocolate Cake Recipe Some of you asked me to make chocolate cake on my channel on Youtube. And if you have been following me, or know me even a little bit, you know that I only need the tiniest of excuses to make anything chocolate related. A few weeks ago, that excuse was "to not forget how to make brownies."But this time, it was more valid since a lot of you wanted me to make a good, comprehensive recipe for this baby right here. So get your aprons on, because we're about to make some cake, and it's gonna be drool worthy. Just look at it!After I was finished making it, I made sure everyone in the family got a taste. Okay so here are the ingredients you'll need:All purpose flour - 1 and 3/4th cupsSugar - 2 cupsCocoa - 3/4 cupsBaking Soda - 1 and 1/2 tspBaking Powder - 1 and 1/2 tspSalt - 1 tsp2 eggsMilk - 1 cupOil - 1/2 cupVanilla extract - 2 tspHot water 1 cupChocolate Ganache300 gms dark chocolate300 grams nutella360 grams heavy creamChocolate Mirror Glaze:To Bloom Gelatin:1 tbsp Gelatin1/4th Cup WaterTo make the mirror glaze:100g Condensed Milk2 tbsp Cocoa Powder100ml Water3/4th Cup Sugar/150g150g Chocolate ChipsHere is the direction6 NO COOK Instant Party Ideas! The idea is to cover the lid so none of the steam escapes26) cook on a high flame for 20 minutes27) after 20 minutes we'll cook it on a low flame for 30 minutes, make sure once again that the lid is sealed off properly and there's no way any steam will escape so that the mutton infuses with aromas and spicy flavours and cooks well28) switch off the flame after cooking for 30-40 minutes, now open the lid and check!serve hot and garnish with dry fruitsyou can serve it with raita as well- recipe: https://youtube.com/watch?v=PRd4QB22ua0Do check out the Mutton Biryani Recipe!Jalapeno Poppers Recipe Ingredients:8 to 10 Jalapeños 1 tbsp Cream cheese 5 tbsp Grated Cheddar Cheese1-2 tbsp Grated mozzarella Cheese2 tbsp Chopped vegetables of your choice ( I have used:1 tablespoon chopped onion + 1 tablespoon red bell pepper+1/2 tablespoon boiled sweet corn)1 tbsp green bell pepper)1 Cup Bread crumbs1/2 Cup Plain flour/Maida 1/4 tsp Black pepper powder 1/4 tsp Red chilly flakesOil for fryingMethod:First we prepare the filling by mixing both the cheeses. Now add your chopped vegetables, black pepper powder, red chilli flakes (I’m not adding salt as cheese is already salty).Mix it all together.Keep that mixture aside and start cutting the jalapeños. 1st way of cutting-First, cut the top part, now smoothly deseed it by removing the middle part.2nd way of cutting-Cut the top part and then split the jalapeño from the middle to deseed it with a spoon. Now fill the hollow jalapeños with the mixture that we had set aside(after filling it in, join all the parts back and make sure they stick together-or you could just fill the parts separately, upto you). Now it’s time to coat the stuffed jalapeños.For that, take plain flour, red chilli flakes, salt, and mix it together. You can use oregano as well. Now keep adding water and mixing it together to create a thick flowing consistency. On the side, I have my bread crumbs which I have made by mixing oats and bread crumbs. Now, dip the jalapeños in the flour batter, and then coat them in bread crumbs.Repeat this step one more time. p.p1 {margin: 0.0px 0.0px 0.0px 0.0px; font: 12.0px 'Helvetica Neue'; color: #454545} p.p2 {margin: 0.0px 0.0px 0.0px 0.0px; font: 12.0px 'Helvetica Neue'; color: #454545; min-height: 14.0px} Now it’s time to fry the jalapeños.Once they turn crispy and golden brown, they're ready to be served!Happy Holi! I hope you will enjoy it.Butter Chicken Recipe Restaurant Style We've shot the butter chicken recipe before as well, with bones and from scratch, so we roasted the chicken ourselves in the oven.
